“Fish Fruit!”

“Fish Fruit!”



  • 400g King Prawns
  • 6 small Avocados
  • 150ml Low Fat Mayonnaise
  • 100g Sweet Chilli Sauce
  • Salt
  • Pepper
  • 2 Gelatine Leaves
  • Juice of 1/2 Lime
  • 300g Mango Pulp
  • 8 Gelatine Leaves
  • Juice of 1/2 Lime


  1. Cook and chop the prawns, keep them chunky.
  2. Remove all the flesh from the avocados, mash with a fork. Add the mayonnaise, lime juice, chilli sauce and seasoning. Soak the gelatine for 10mins in cold water. Add this to a warm pan with a splash of water to melt the gelatine. Add this to the mix.
  3. Put the mix into a 12 hole muffin tray. There will be enough mixture to just about fill each hole. Put this into the freezer now.
  4. Once frozen set, remove six rounds. With a blowtorch melt each large surface. Place the removed ones onto the ones left in the holes. Place back in the freezer to set again.
  5. Now to turn them into fruit. Again soak all the gelatine for 10mins in cold water. Add this to about 100ml of the mango pulp. Heat in pan until it all dissolves. Add the remaining mango pulp and lime juice to taste.
  6. I find the easiest thing now is to get some sort of long kebab skewer or bamboo stick. Pick the mousses up with these and dip into the mango jelly. The jelly will set quite quickly as the mousses are frozen. Put these in the freezer for 20mins and then repeat.
  7. To make them look the real thing, add a clove and a bay leaf. Serve with crusty bread.


  1. Avocado, prawns mousse is a perfect summer treat. Adding the mango really makes it different.

      I just thought a nice mango salad goes well with avocado and prawns. Plus mango pulp is a lot easier to get hold of than orange purée. It looks impressive but just needs a bit of planning.

      I wouldn’t quite go as far as genius. We can save that for when I invent nuclear fusion. For now inspired is probably a bit more suitable. Glad you like it.
