Garlic and Thyme Chicken, buttered Jersey Royals with Gorgonzola and pear salad.

A nice midweek dinner. There’s a lot of ingredients but not generally alot of cooking, just an assembly job. If you get time to marinade the chicken great, if not it won’t ruin the dish.

Tomato Sauce:

  • 400g chopped tomatoes
  • 100g Olives
  • Handful basil
  • Splash of vinegar
  • Couple of thyme sprigs
  • Clove of garlic
  • Handful capers
  • Tsp sugar.
  • Salt and pepper.


  • 2 Chicken Breasts
  • Thyme sprigs
  • Garlic
  • Olive oil

Jersey royal potatoes:

  • 350g jersey royal potatoes( or any other new potatoes)
  • Clove of garlic
  • 1 Tbsp chopped parsley
  • 25g Butter.


  • 100g Rocket
  • 50g Gorgonzola
  • 50g Walnuts
  • 1 Large Ripe Pear, peeled and diced
  • 1 Tbsp Balsamic Vinegar, 2 Tbsp olive oil, 1/2 tsp Dijon mustard, s&p

1) Mix the oil thyme and garlictogether, rub over chicken and leave for at least an hour or overnight.

2) Make the sauce by heating a tbsp of oil with the thyme and garlic. Add the tomatoes, vinegar, sugar and let it simmer for 20mins. Now add the chopped olives and capers,finish off by tearing the basil into the sauce, keep warm.

3) Put the potatoes ina pan and simmer for 20mins.

4) After 10 mins cook the chicken skin side down for 8 mins in a over a medium heat. Turn and give it another 5 mins.

5) Combine all the salad ingredients but hold the dressing on the side until last minute.

6) Heat the butter, garlic and parsley to infusea little, then pour over potatoes and crush with a fork. Season generously.

You are now ready to plate up, pour dressing over the salad at he last minute and serve it on the side.
