Lomo Saltado

Lomo saltado, if you didn’t already know, is a Peruvian dish. It is generally served as a beef stir fry with onions, peppers etc. To change it around, I basically put all of the stir fry ingredients into a marinade. Marinaded the beef for a few hours and served it with a mango and avocado salsa.

The soy infused steak makes a great change to just plain seasoning and grilling it. I served this with some spicy wedges. All in all, happy campers for a meal which only takes half an hour to throw together.


    Steak Marinade

  • 4 Cloves Garlic
  • 150ml Soy Sauce
  • 2 Tbsp Red Wine Vinegar
  • 2 Tsp Worcestershire Sauce
  • 1/2 Tsp Cumin
  • 1/2 Tsp Dried Oregano
  • 1 Per Person. Sirloin Steaks
  • 4, skinned and diced Tomatoes
  • 4 Spring Onions
  • Mango Salsa

  • 1, diced Mango
  • 1, diced Avocado
  • 1, chopped Chilli
  • 1/2, seeded and cubed Cucumber
  • 1Tbsp Coriander
  • 1/2 Finely chopped Red Onion
  • Juice from 2 Lime Juice
  • 4 Tbsp. Olive Oil


  1. Put the garlic, soy sauce, vinegar, worcestershire sauce, cumin and oregano in a bowl. Add the steaks and give them minimum 2 hours. Overnight ideal.
  2. Mix all the salsa ingredients together and season to taste.
  3. Fry the steaks to your liking. Being sure to let them rest. As they rest add the marinade to the pan with the tomatoes and spring onions. Reduce until sticky.
Serve with wedges, chips or another style of roasted potato.
