Rose Potatoes and Chicken Piccata

Rose Potatoes

This weeks dish is a tale of two halves. The chicken piccata has been adjusted to my own tastes. It is a great midweek dish full of flavour, zing and filling. The potatoes are my latest pomme de terre creation. They do look amazing, and surprisingly tasted as good as they looked. Follow the step by step guide below.


  • 1 Breast/person Chicken
  • For dusting Flour
  • 150ml Chicken stock
  • 100ml White Wine
  • Juice of Lemon
  • 2 Tbsp Capers
  • 2 Tbsp Chopped Parsley
  • 2 Cloves Garlic
  • 50g Butter
  • 3 Medium Sized Waxy Potatoes


  1. Dust the chicken breast with flower. Cook in a large pan for 3 minutes per side and remove to a plate. Turn up the heat, add the white wine, let it reduce by half. Now add the chicken stock, lemon juice and garlic. Place the chicken breasts back into the pan and simmer for 5 minutes as the sauce thickens.
  2. At the end add the butter a little at a time until you have a consistency you are happy with. Finally add the parsley at the end.
Serve with the potatoes as above and some steamed green beans.
