This dish is one that was going to appear on the Italian round of MasterChef. Luckily I managed to get a bye through that round, so the recipe is still mine. I’ve already got a mushroom risotto on this website, but I’ve work on the already good recipe and turned […]

Strawberry and Tonka bean Affogato, best shortbread ever.
If you can’t make it to The Southbank Centre in London next week to try my menu, here at least is the dessert. I can’t remember where I got the inspiration, it was just one of those light bulb moments. Have you ever seen an affogato that isn’t coffee? The […]
Update and SeaBream, pistachio and broccoli
Things are as busy as ever. Which is great. I’m currently concentrating on next weeks event at The Rivals, Royal Exchange Theatre, Manchester. The team are great and have been so helpful. Anyone that is coming to the sold out event I hope you enjoy it as much as I […]
A recipe in print!
For those of you that follow my social media channels, you’ll no doubt see I’ve been rather busy. My first couple of pop up restaurants have gone well. I then also did my first food demonstration at Foodies Festival this weekend in London. I was flicking through the festival magazine […]
Cooking Events
Things certainly haven’t settled down since the show aired. Understandably things are now just busier and more complicated. I’ve added an “Events” page to the top of the blog. This will be updated with what I’m up to and links for tickets when available. Last night I did my first […]
Parmesan Crusted Salmon, Spiced Potatoes, Coconut Chutney and Lime Emulsion
I first made this dish years ago. As I always want to learn new things, I very rarely cook it though. Despite this recipe being my most re-pinned out of everything I have ever made. I’ve tweaked it over the years, but keep coming back to the way I first […]
Post MasterChef Life
The dust is now beginning to settle after Fridays final. I’ve not been inundated with offers, but I’ve had the offers I want. Interestingly, throughout the entire show, no one ever asked me why I had entered the competition. There were definitely a few days when I thought that myself. […]
Adam Reid at The French
After my MasterChef journey came to the end, we thought it would be fitting to eat at my favourite restaurant in Manchester. Adam Reid at The French. Adam has been picking up many well deserved accolades for his exceptional cooking. His philosophy is straight forward, taking inspiration from the local […]
Miso Mackerel, Gomadare spinach and black rice
This is such a simple dish, but packed full of flavour. It makes great use of mackerel, even for those who are frightened of it. The sauce is addictive, possibly the best use of tahini ever.
