Brown Bread Ice Cream and Marmalade Cake.

Ingredients

  • 300ml Cream
  • 300ml Milk
  • 1 Vanilla Pod
  • 4 Egg Yolks
  • 100g plus enough to cover breadcrumbs. Sugar
  • 200g blitzed to breadcrumbs. Brown Bread
  • Marmalade Cake

  • 250g Unsalted Butter
  • 150g Caster Sugar
  • 150g Marmalade
  • 225g Plain Flour
  • 1 Tbsp Baking Powder
  • 4 Eggs
  • Salted Butter Caramel.

  • 200g Sugar
  • 200ml Cream
  • 1 Tbsp Salted Butter
  • 1/4 Tsp. Sea Salt

Directions

  1. Make the ice cream. Mix equal quantities sugar with the breadcrumbs. Grill until caramelised about 5 mins, stir 5mins, stir 5mins. Set aside in an air tight container.
  2. Bring milk, cream, sugar and split vanilla pod to the boil. Turn off heat and let infuse. Beat the egg yolks until white and aerated. Add a splash of the milk to the eggs, stir then pour back into the pan with the remaining liquid. Cook over a low heat stirring all the time until it coats the back of a spoon. Transfer to the fridge to cool. Freeze in ice cream maker. As you remove from ice cream maker to a freezer container stir in the toasted caramelised breadcrumbs.
  3. For the cake, either put all ingredients in a food processor and mix together. Or cream butter and sugar, then add dry ingredients, then eggs one at a time. Add marmalade at the end.
  4. Put in a buttered 24cm(8in) square cake tin and bake at 180°c for 40mins. 
  5. For the caramel, heat the sugar until it begins to turn a carmel colour and give off it's beautiful aromas. Take off the heat, add cream. Stir until combined then add the butter and salt to taste. This makes 250ml which will keep for a while.
To serve drizzle the plate with the sauce, cut out a square of cake and top with a quenelle of the ice cream.

  1. Brown bread icecream went through a bit of a fashion in the 90s but it was always very hit and miss. I love your thinking on this dessert. It sounds like a total HIT – plus I have a weakness for malteasers 😉
