I had just happened to create this cake when FoodNerd4Life asked if I would participate in her virtual bake sale on 27th September. It is a great cake to make if you want one to last a week or so, I know that is a contradiction in terms. The cake is gluten free being made with ground almonds and pistachios, hence won’t dry out quickly.
It tastes a touch oriental with zing from the lime, I thought this could be balanced wonderfully with a Chai Tea cream. I actually made a chai tea foam to squirt onto the cake as and when. For most that don’t have a whipper at home I turned it into an ice cream.
Obvioulsy, ground pistachios aren’t sold in shops. Just place the weight of pistachios in a food processor and blitz until fine.[purerecipe]
Ingredients
- 150g Butter
- 165g Caster Sugar
- 1 Tbsp Lime Zest
- 1 Tsp Vanilla Extract
- 4 Eggs
- 180g Ground Almonds
- 130g Ground Pistachios
- 500ml Soya Cream
- 250ml Milk
- 4-5 Tbsp Chai Tea Powder

Directions
- Make the cake, beat the butter, sugar, lime zest and vanilla until pale and fluffy. Add the eggs one at a time until well incorporated. Fold the nuts through until well combined. Line a loaf tin with baking paper, add the cake mix and bake at 150°c Fan for 1 hour. It may need 10 minutes extra. Let the cake cool in the tin before you turn it out.
- The ice cream is the easiest ever. Add all the ingredients into a pan, taste to see if any extra chai tea powder is needed. Bring to a boil let cool. Transfer to an ice cream machine and churn.
My husband loves pistachios…I think he would be pleased if I served him a slice of this cake.
